The recipe we bring you in this occasion is quite common and you can find it in many web sites and cooking books. But today we will show you a different way to cook it, adding an ingredient less frequent in domestic stoves: Almond flour, which we will have to mix with strong flour to make the dough firmer.
- 200 g ecological almond flour
- 100 g strong flour
- 150 g extra virgin olive oil
- 70 g water
- 50 g lard
- 20 g compressed fresh yeast
- 100 g red pepper
- 100 g green pepper
- 100 g zucchini
- 100 g onion
- Mixer / Blender / Thermomix
Time: 1 hour
Step 1 – Get things ready
Preheat the oven to 200º and grease a tray with extra virgin olive oil.
Step 2 – Heating up
Next pour 50 g of extra virgin olive oil, 70 g of water and 50 g of lard in a casserole and heat it at medium heat during 2 minutes. If you have a Thermomix it will give you the possibility to heat at 37º for one minute.
Step 3 – The heart of the experiment
This step is essential for the recipe. You have to be careful with the dough so that we make it well. In other more common recipes it is indicated to use 300 g of strong flour to get a firm dough. As we will use ecological almond flour we are going to weaken it, so we should add less water.
You can find it at your local supermarket or you can make it manually using natural peeled almond. Of course, you can also find it in our product catalogue.
That said, we will put in the mixer 20 g compressed fresh yeast, 200 g ecological almond flour and 100 g strong flour. With the ecological almond flour we will get a slightly sweet flavour, although it’s basically neutral. It has texture is smooth structure with uniform particles. Its ecological character along with the selected peeled almond that it contains, will be an original way of eating healthy.
To finish the dough we are going to add a teaspoon salt and a pinch of sugar (better if it is brown sugar).
Step 4 – Crafts
When the dough is ready we will put it in the oven tray, previously greased. In this moment we will have to show our hand skills, because we have to spread all the dough on the tray trying to get a compact and very thin layer. You can do it with the roller or with your own hands .
Step 5 – The perfect topping
With the dough in its place, lets chop the rest of the ingredients: peppers (red and green), zucchini (unpeeled) and onion. We add 100 g of olive oil, 2 teaspoons of salt, 1 tablespoon of paprika (if you have paprika from La Vera it would be much better, this ingredient is a luxury)
When everything is ready stir in the mixer during barely 3 – 5 seconds. The point is to obtain a cover to add to the dough, no to chop the ingredients.
After that we cover the whole dough with the vegetables. This time, as you can see in the photograph i have fallen short of vegetables. As this will depends on the size of the oven tray, it is up to you how much quantity you want to add. Calculating at a glance we should add 30 g more of each kind of vegetable.
Step 6 – Bake and wait
Once we have our tray nicely decorated, we will put it into the oven (preheated at 200º) and we will wait 20-25 minutes while it is baking.
The result is a green recipe with orchard products and using ecological peeled almond flour. We think it is the perfect recipe if you want to give an unusual surprise sharing a healthy meal. Enjoy it!
