Pistachio and almond Ice Cream

Today we bring you a recipe that is not only tasty but it should also be a must to do if we take into account the warm temperatures that we are getting in our land, over 40 degrees. In Extremadura we change from coat to swimsuit in less time than we will spend preparing these yummy ice creams, only with products of our catalogue:  Organic peeled almonds and organic peeled pistachio.

 

Ingredients:

  • 200g organic peeled pistachio
  • 360g sugar
  • 200g organic peeled almonds
  • 1L milk
  • 50g corn-starch

 

Utensils:

  • 2 glass tray/silicone container
  • 2 tight container
  • 2 bowls
  • 1 wooden spoon to mix
  • Film cook paper
  • 1 Blender
  • 1 Mixer
  • 1 saucepan
  • 1 jug
  • 1 freezer

Time: 1 h 30 minutes

 

Preparation:

Step 1 – Chopping our product

To start with, add to the blender the peeled organic pistachios and 180g of sugar. Chop them until they look like sawdust and pour them in a bowl. Do the same with the remaining sugar and the peeled organic almonds.

 

Step 2 – The Substance

Then pour in a saucepan the milk and corn-starch. Cook the mix for about 10 minutes. When it is ready pour it to a jug.

 

Step 3 – Mixing products

Continue adding 525g of the jug mix (milk and corn start) to the blender. Also add to it the peeled organic pistachios that we had reserved in the bowl and whisk it all during 20 seconds. When it is done, place the mix in a recipient and cover it with the film cook paper and let it temper before placing in the freezer. Once again, repeat this with the peeled organic almonds and the remaining mix in the mixer jug.

 

Step 4 – A long wait

When we have both of the recipients covered with the film paper, let it temper for about 1 hour and set them aside in the freezer for at least 8 hours.

 

Step 5 – At last!

Just before serving, place the recipients in the fridge about 10 minutes. After that, chunk both mixtures to blend them for 20 seconds. After wards we have to whisk them another 10 seconds. Finally, we should pour the ice-cream in a tight container and set it aside again before serving it. We do it this way to get it the best texture to taste it properly.

 

Step 6 – Enjoying an organic ice cream

In our example we served the ice cream in ball- shaped in 2 glasses. As you can see in the picture, we made a healthy and very refreshing product that is ideal to fight the heat. Enjoy it!
