Hazelnut cookies

Today we bring you an easy and perfect recipe to spend your afternoon in good company, Hazelnut cookies. The star ingredient today is the blanched organic hazelnut, a very beneficial nut four our heart and, by the way, unusual in our stoves. However, its natural personality and the fragrance it gives off when part of a dish, like the one of today, are two qualities that you must not waste.

Ingredients:

  • 130 g hazelnut
  • 200 g pastry flour
  • 100g sugar
  • 150 g butter (softened)
  • 1 egg

Utensils:

  • Mixer / blender / Thermomix
  • Plastic wrap
  • Baking paper
  • Baking tray
  • Oven
  • Pastry brush

Time: 2 hours and 30 minutes

 

Preparation:

Step 1: Getting the scenery ready

First of all, beat the egg and put it aside, later on we are going to reveal the Van Gogh that we carry within us when painting the cookies. Add to the blender the hazelnut and chop them about 3 seconds. We will be able to blanch them easier this way.

Step 2: The mix

Then crush the blanched hazelnuts during 8 seconds at high speed and take off the blender 2 tablespoons to decorate the cookies later. After this add pastry flour, sugar, butter and mix it all during 30 seconds.

 

Step 3: Handicrafts

It’s time to show the world our artistic side. For this recipe we need to be a bit handy (not a lot, don´t worry). Let´s go:

Take off the dough from the mixer and wrap it with plastic wrap. Afterwards keep it in the refrigerator for 1 hour.

When the time is up, preheat the oven at 180º, line the baking tray with baking paper and set it aside. Pull out the dough from the fridge and break it in two, helping yourself with the plastic wrap (be careful here, the dough is tacky) and make 2 cylinders with it, as you can see in the picture.

 

To end this step place the 2 cylinders carefully in the freezer and keep them there for 25 minutes.

 

Step 4: Cutting out cookies

Once the recommended time is up, take the cylinders out from the freezer and slice them with a knife, taking off the plastic wrap slowly. Maybe the dough is not compact enough to slice it, don’t worry because you will shape it in cookie shape easy because its clinging texture.

 

Step 5: Showing off our artistic side

Take now the oven trail with the baking paper and put the shaped cookies there carefully. After that brush them with the egg we beat at the beginning of the recipe. Finally sprinkle the cookies with the chopped hazelnut.

 

Step 6: And finally, the piece of art

Once we have our cookies, put them in the preheated oven (180º) and wait for 30 minutes.
